Production Kitchen Shift Manager (Sous Chef)

Description

We are looking for a dynamic individual to help us scale up Farmdrop’s already successful venture into food production. Reporting to our Executive Chef they will be taking responsibility for the smooth daily running of the Production Kitchen and leading it’s stable and committed team. The ideal candidate will have a proven and stable track record developing teams and organising operations in large-scale premium events or central production kitchens, delivering continuous improvement projects and driving delivery of operational KPIs.


This role will require you to lead from the front getting stuck into production of premium products. Running the kitchen and overseeing all sections. We see this role developing as the business grows so we are looking for someone who is adaptable and able to work as a part of a large team.



The Role

We expect the typical hours of work to be between 9am and 6pm, five days a week.


This ‘hands on’ role will develop as the business grows. Typical areas of responsibility will initially include:


People


  • Managing shifts in the production kitchen, including allocating sections.
  • Maintaining standards through a team of 15 kitchen team members.
  • Collaborating with our Product Development Team and Administrator in order to continue rolling out new products.
  • Coaching each team member to unlock their full potential through 1:1 reviews, identifying development opportunities. 
  • Liaising with suppliers and other functions with the wider Farmdrop business, in order to organise orders, incoming goods and product dispatch. 
  • Maintain Farmdrop’s excellent culture, having a positive attitude and working well under pressure.


Production


  • Lead by example, getting stuck into preparing, cooking and packaging premium products.
  • Managing all aspects of production on site including goods in, production, quality control, stock control and packaging & equipment management.
  • Ensuring all product quality, food safety HACCP and H&S standards are met throughout production.
  • Managing ingredient inventory against production forecasts and ordering.
  • Monitoring and achieving the daily production output against orders received.
  • Ensuring compliance to all company policies, procedures, systems and paperwork.
  • Driving continuous improvement with your team, mapping and refining production processes. Developing concepts into viable change projects.




Requirements 


We expect this business function to grow in the next 6 months and continue to scale over the next few years. The ideal candidate would be able to grow with the business.


  • A skilled chef with management experience in a busy food production environment, ideally premium hand-made production environment
  • Ability to follow and train complex batch recipes with a high level of precision is essential
  • Resilient self-motivated with excellent communication and organisational skills
  • Experience with planning and stock management
  • Competent IT skills, particularly proficient in G Suite. You will be using our systems to manage inventories, order products, receive orders and update product details
  • Knowledge of Food Production, Quality Management and Health & Safety, ideally with HACCP & Food Safety Certifications
  • Experience working with fresh seasonal produce is essential
  • A passion for fresh, healthy and ethically-sourced food and a desire to Fix The Food Chain
